Santabarbara replicated his father's experience for the show by going to Seymour VanderVeen's Duanesburg farm to gather fresh milk to use for the basket cheese.
"I think visiting a working farm is something everyone should do," said Santabarbara. "It's easy to forget how easy it is to walk into a store and buy some cheese, but making it is a long process, and it's hard work, like farming.
Santabarbara's father, also named Angelo, said all the hard work is worth the effort for the final product.
When asked if good basket cheese could be found at any local import store, the elder Santabarbara came to the defense of his ancient family recipe.
"No," he said. "It's better than any other product, free of preservatives. It's better than any other product."
The "Let's Cook" episode starring Angelo Santabarbara will rerun on Wednesday, April 9, at 7:30 p.m. and on Thursday, April 10, at 9:30 a.m.
