Chef to demonstrate proper chicken cutting techniques at greenmarket

Dr. David Brough, CEC, CCE, Professor and Chair of the Hotel, Culinary Arts and Tourism Department at Schenectady County Community College, will demonstrate proper techniques for cutting up chicken at the Schenectady Greenmarket,Sunday, Nov. 15,from 10 a.m. to 12 p.m.

Dr. Brough has been a member of the SCCC Faculty for nearly 20 years. He earned his A.A.S. degree in Hotel Technology from SCCC, B.S. degree in Hotel Administration from the University of Nevada at Las Vegas, M.S. in Hospitality and Tourism Management from the Rochester Institute of Technology, and his Ph.D. in Curriculum and Instruction from the University at Albany.

Schenectady Greenmarket is held year-round, every Sunday from 10 a.m. to 2 p.m. The market opened in November 2008 and has been an overwhelming success in the city ever since. Originally started in 2008, the Indoor Market is located in Robb Alley and the Education Center, Proctors at 432 State St., Schenectady, through April 2010.

The Outdoor Market will take place near City Hall from May through October 2010.

Shoppers may purchase fresh, whole chickens, ready for the oven for $3.50 per pound through Cooper's Ark Farm, by calling at(518) 295-7662, from 6 a.m. to 7 p.m. They may then pick up the chicken at the market on Nov. 15 and learn how to properly cut it. Chickens will also be available for sale that day.
