Below is a recipe for homemade Jalapeno Poppers to add a little green to your day.
- 15 jalapeno chili peppers
- 8 ounces cream cheese
- 4 Tablespoons chopped onions
- 2 cloves garlic, chopped finely
- 1 cup shredded New York Sharp Cheddar Cheese
- ½ cup shredded Monterey Jack Cheese
- Salt and pepper
- 1 cup Parmesan Cheese
- ½ cup Italian bread crumbs
Slice the peppers length wise cutting off ¼ of the pepper and remove the seeds. Chop the ¼ of the pepper until you have 5 Tablespoons of jalapeno, combine with cream cheese, onion, garlic and shredded cheeses. Season the mixture with salt and pepper and spoon into the hollowed peppers to make a popper. Combine the parmesan and bread crumbs and dip the top of the popper in the mix. Coat a baking sheet with cooking spray and arrange the poppers on a baking sheet. Roast until toasted and bubbling, 15- 17 minutes. Allow to cool slightly, serve and enjoy.
