Watermelon and Feta Salad
Ingredients — Serves 4
1 small watermelon cut into cubes
6 cups mixed greens (combination of romaine, red leaf, green leaf lettuce, and arugula (any or all) chopped
7 ounces crumbled feta cheese
1/2 cup sliced almonds (toasted)
3/4 cup fresh mint julianned
Place chopped greens, watermelon, feta, mint, and toasted almonds, in a bowl and toss. Pour dressing over the top and toss again. Serve.
White Balsamic Dressing
1/2 cup extra virgin olive oil
1/4 cup white balsamic vinegar
1/4 cup shallots chopped fine
2 Tbs. honey
1 tsp. Dijon mustard
1/2 tsp. sea salt
1/4 tsp. fresh ground black pepper
1/8 tsp. garlic powder
Whisk olive oil, balsamic vinegar, honey, Dijon mustard, salt, pepper, shallots, and garlic powder together in a bowl until blended.
