COLONIE – The Planning Board granted the final approval earlier this month to the owners of Latham Farms to build a one-story, 9,000-square-foot building that will house two restaurants and a retail establishment.
CoreLife Eatery, a fast food-type restaurant with a focus on healthy foods, has a lease to occupy 4,000-square-foot of interior space with a 1,055-square-foot patio. The restaurant will seat 170 and employ 12 people.
CoreLife Eatery is a national chain based in Syracuse with locations in nine states.
The second, yet to be named restaurant will occupy 2,600 square feet, enough room to seat 60 people and employ six.
The remaining 2,400-square-foot of the building will be dedicated to a yet to be named retail establishment.
The new building will be constructed where Walmart once had its garden center before Latham Farms shifted gears and moved Dicks Sporting Goods and Field and Stream into the old Walmart Space.
The garden center was demolished to make way for the new building. After a short debate on the height of lights in the parking lot, the Planning Board was unanimous in approving the final site plan.
Construction on the new building is slated for this spring.
